Mechanized Rotary Gari Fryer
The machine consist of a frying bowl of about 4 feet in diameter. At the centre of the bowl is suspended a frying mechanism (the Stirer) which is powered by an engine. The arrangement of the mechanism is such that as it revolves arround, it intermitently moves in and out within the bowl. During this process the flakes of gari are stired and an even distribution of the heat is ensured.
The heat for the drying process is obtained by applying fire at the bottom of the frying bowl. To ensure heat insulation, the frying bowl is enclosed by clay bricks (not shown) leaving two openings only for a door to put fuel wood or charcoal and for a chimney.
Same machine can be used to roast all types of cereals and pulses

Mode of Gari Fying: Grated and squeezed cassava is fed in batch into the machine Each batch will take 50kg (1 bag) of gari and will last for about 20 minutes.
